We decided to go on a picnic at the park today. It was a lot of fun & I was pleasantly surprised. I was expecting ants & bees but we had none of that. The weather was perfect, there was a slight breeze blowing, which felt great. I think we all enjoyed some much needed family time.

Father's Day Gift Idea
****Cory- if you look at our blog please skip this post!!****
I thought I would share a Father's Day idea that I started last year for Cory.
I just got a blank notebook like the one pictured below. Every year the kids will add a note to their daddy, we'll put a picture of them in it & we'll trace their handprint.
Cory really enjoyed receiving this book last year & I look forward to doing every year. I think he has forgotten about it, so it will be a surprise again!

Carter's Favorite Meal
lunch meat (rolled up), cheese, & whatever fruit we have. Yesterday was blueberries & grapes. Last night he got everything out of the fridge for his meal, including the Hershey bar. I came in the kitchen & asked him why he got the candy bar out. He said "I need it. It will make my tummy feel better." And he was totally serious. It was funny. Needless to say he ate his meal, without the candy bar.

We're done....for now
Today was Carter's last day of gymnastics. We decided to end this month, but we may start him back up sometime. He will be starting swim lessons in a week, which will be during his gymnastics time & then in the fall he will have pre-school on Thursdays, so we would have to find a different time for him to go anyways. Plus, he didn't totally love going. I think he had more fun playing with the train table that they have there! We will see how he feels in the fall & maybe he'll go again.
He had a big fan club watching him though. Daddy, Grandma & Grandpa Wallace, Uncle Tom & Marci, Holli & Faith & Erin & Courtney all came to show their support during the few months that he participated. And last week he got to bring his friend Maddox to do gymnastics with him. Both boys had fun in the foam pit!

Crispy Southwest Chicken Wontons
I made these for dinner tonight & they were really good. I got the recipe from Picky Palate's blog. I baked them in the oven, instead of frying them.
Let me know what you think.
Crispy Southwest Chicken Wontons
2 Tablespoons canola or vegetable oil
½ Cup finely diced white onions
½ Cup finely diced red bell pepper
2 large cloves fresh garlic, minced
1 12 oz can chunk chicken, drained (from Costco)
¼ Cup packed fresh cilantro leaves, finely chopped
¼ Cup Verde Salsa (I use Herdez brand)
2 Tablespoons prepared ranch dressing
½ package wonton wrappers (I used the brand Nasoya, found in produce section of grocery store)
1 egg white whisked with 2 Tablespoons water
1. Heat oil into a large skillet over medium heat. Saute onions and bell pepper for 5 minutes or until softened. Stir in garlic for 1 minute and remove from heat.
2. In large bowl add onion mixture, chicken, cilantro, salsa, ranch, salt and pepper. Mix until well combined.
3. Place 1 Tablespoon chicken mixture in center of wonton wrapper. Brush bottom edge with egg white wash, fold over filling and press edges together firmly, forming a triangle shape.
4. 2 options of cooking. 1st is place about 1 inch of canola or vegetable oil in a medium skillet over medium high heat. When hot, place 4 wontons at a time into oil. Cook 1-2 minutes per side or until golden brown. 2nd option is place wontons on a baking sheet; bake at 375 degrees F for 15-20 minutes or until crispy, flipping once half way through cooking.
5. Serve with Ranch dressing or salsa if desired.

Bon Appetit
Claire had her first taste of rice cereal today. Not sure if she really enjoyed it or not. Cory would give her a spoonful and she just let it sit in her mouth for a minute & then swallowed it. I'm sure she will like it more once she gets used to it. She's about 5 & 1/2 months now.

Super Tommy.Today we went with Lori Anne, Maddox & Will and Jennifer (Miller) Warren, Addelina & Matthew. Jennifer is another friend from Elementary School. Her husband Vergil also went to Elem. School with us. He is currently serving in Iraq.
We all have 2 kids now, basically the same age.

GAS
Don't even get me started on the price of gas. We're paying $3.86 a gallon here & I think it is outrageous. But I have to give props to Cory. He filled up his gas tank today & the last time he filled up before this was on April 2!!! That's a month & a half ago! He has been riding his bike to work most days & when he doesn't ride his work is only 3 miles away, so it's not bad. Not only is he helping the pocket book & the environment, he's getting a great work out as well.
Way to go Cory!
Is she always this happy?
And luckily I can say that most of the time she is!
This morning I took Carter & Claire on a bike ride. We were heading to the bike trail & saw a sign which said the fire department was doing some training out in the field. As we were riding down the road about 7 fire trucks were leaving. Each of them stopped & waved to Carter. He thought it was pretty cool. As we road further we saw a grass fire that they were practicing on. Carter also thought it was neat that he got to see a fire burning.

Another Busy One
We had another busy weekend, which makes for an extremely long post, with LOTS of pictures.
It started out busy for Cory on Friday. He had a golf tournament for work in the morning & then in the afternoon went to a co-workers to play Risk 2210. That evening he went to get fitted for a tux for Tom's wedding.
Friday night I had a wedding reception to attend so Claire came along with me. Carter stayed home with Grandpa.
Saturday morning Cory went to the Mather AutoCross. He rode 5 laps with a friend & did a bunch of filming of the races. Then he went to work for 6 hours.
I went to our Stake Relief Society Conference on Saturday morning with Claire. It was really nice & we had a delicious lunch. We also assembled over 200 baby bundles for Mercy Hospital.
Saturday afternoon Carter's buddy Grayson came over. They had a lot of fun playing together. My sister Lisa called & said they were bringing their train down to the park. Once Cory got home from work we brought Carter & Grayson over so we could go for a ride.
A cat came up behind it & all of a sudden it opened it's feathers....
It was amazing, it was as big as the garage door!
We went back to Grandma & Grandpa's after the train & Claire went for a dip in the little pool
